    New Liquid Oak Tannins produced by Toasted Oak Inc. are water based, French Oak Tannin concentrates, designed to easily integrate smooth and flavorful oak character into a wine, without the cost or hassle of traditional oak barrels. While powdered tannins are similarly cost effective, there will be some loss of flavor and texture due to the high temperatures necessary to evaporate all liquid out. Liquid Oak Tannins are the perfect balance of oak barrel flavor, and pure tannin cost.

    Aside from the beneficial flavor impact of these products, they are also easier to add to the wine and assure even dilution. These Liquid Oak Tannins are for red and white wines. Please do bench trials carefully when considering their use in white wines. Additions may cause filterability(and stability) changes. Do not exceed 30% of normal red wine dosing for white wines.

    Fruit Enhancer Plus has more proanthocyanidic tannin components to emphasize a ripe berry character and a fruity, aromatic style. It has to be carefully dosed as it will have a strong influence on the existing character of the wine. Works best on red wine to accentuate a ripe berry character (Black Cherry character).

    Vanilla uses a different toasting method, and is a dense concentration of the vanillin present in oak. Aside from giving a slight vanilla accent, it also produces a very smooth – almost creamy – addition to a wine.

    Keller-Pur Potassium Caseinate preparation offers the best in tannin management addition technology to the winemaker.

    The caseinate will adsorb negatively impacting polyphenols and vinegar precursors. Its also effective against substances which can bind out SO2, thereby requiring higher concentrations and more frequent additions of sulfur. While this fining will tend to soften the wine and reduce astringency due to its removal of insoluble tannins, it does not negatively impact the wine’s color, aroma or flavor concentrations – and carries no risk of excessive fining because it only removes unstable, insoluble tannins.

    The product is best characterized by its very fast and very compact lees formation, allowing for shorter effective treatment times and a minimization of product loss due to adsorption into the lees. Bench trials are recommended to determine the lowest effective concentration to further minimize product loss. Direct addition formula requires no special preparation, simply stir the wine vigorously and sprinkle in slowly, continuing stirring until all the additive is dissolved. Rack off in 2-4 days. Bench trials are highly recommended to determine the lowest effective concentration in order to maintain the highest possible product yield.

    Apply at a rate of 0.05-0.6g/L (0.2-2.4g/gal). Package provides a dosage of 1.5g/gal to a 60gal barrel.
