Abbaye is an Ale yeast of Belgian origin. Selected for its ability to ferment Belgian style beers ranging from low to high alcohol, Abbaye produces the spiciness and fruitiness typical of Belgian and Trappist style ales. When fermented at higher temperatures, typical flavors and aromas include tropical, spicy and banana. At lower temperatures Abbaye produces darker fruit aromas and flavors of raisin, date and fig. Traditional styles brewed with this yeast include but are not limited to Belgian White, Belgian Blonde, Belgian Golden, Dubbel, Tripel, and Quad.

CBC-1 is a fast starter and robust strain which can be used to ferment/referment beers up to 12% ABV. Ferments well in the range of 59 – 77� F. This yeast is a great choice for carbonating beers when the original yeast will not cut it. Great for use when bottle-conditioning Saisons, Tripels, IPAs, and pretty much anything else! CBC-1 does not impart any flavor on the beer to be refermented / bottle-conditioned.

Quick start and vigorous fermentation, which can be completed in 4 days if kept above 63� F. Medium to high attenuation. Munich is a non-?occulent strain. In classic open fermentation vessels, the yeast can be skimmed off the top. Some settling can be promoted by cooling and use of ?ning agents and isinglass. Aroma is estery to both palate and nose with typical banana notes. Does not display malodours when properly handled. Munich yeast has found widespread use in the production of German Weizen and Hefeweizen. Best when used at traditional ale temperatures (62 – 72� F) and after re-hydration in the recommended manner (see the documents tab for re-hydration procedure).

Some instructions for rehydrating yeasts: Suspend yeast in 4 oz of warm water. Do not stir. Let stand for 15 minutes. Stir gently. Add an equal amount of wort to your solution. Cover, let sit for five minutes, and pitch.
